A hearty farmer’s breakfast, just like in the good old days. Maluns is one of the best-known culinary representatives of Graubünden’s traditional cuisine, made with boiled potatoes and roasted in butter. A tasty piece of Alpine cheese rounds up this rustic dish.

Ingredients

800 g boiled potatoes (firm-cooking variety, e.g. Ostara, Granola)

200 g flour

½ teaspoon salt

100 g butter or margarine

Method

1. Boil potatoes 1–2 days in advance
2. Grate the potatoes, with Rösti grater, or a similar grater.
3. Add flour and salt and mix well
4. Melt butter/margarine in large frying pan, add potato mixture, and roast lightly until a little color forms. Bake on low heat while stirring and turning with a spatula until light brown and small balls are formed
