This delicious specialty from the Fribourg region is a perfect soup for cold winter days - and a very healthy one - given all the ingredients.  


1. melt butter in a pan
2. add leeks and onion, let it sweat slowly
3. add kohlrabi and carrot, continue cooking
4. add vegetable broth, bring to the boil, reduce heat, cover and simmer for approx. 10 minutes
5. add pasta & milk, bring to a boil, reduce heat, simmer for approx. 10 minutes
6. rinse and drain butter beans and add to pan
7. add cream, baby leaf spinach and grated Gruyère to pan, warm through over low heat
8. season with nutmeg and pepper
