The Bricelet is a classic biscuit from Fribourg and orginiated from ‘The Bénichon’ Festival. The traditional thanksgiving fair serves the biscuity waffles as a dessert.
Method
1. combine double-cream, egg, sugar, salt, lemon and ¼ lemon-zest in bowl
2. beat in flour gradually, refrigerate the batter for approx. 2 hours
SHAPE/COOK:
shape batter into balls of approx. 2 cm Ø, place in batches on the hot waffle iron and cook for approx. 1 ½ minutes. Remove and cool on a wire rack.
TIP
Shape the waffles while still warm by moulding them around a rolling pin.
