General information

The name Trinity derives from the three main ingredients used for this dish: kohlrabi, potatoes and beans. Kohlrabi is a widely overlooked vegetable and was traditionally used as pig food. Due to famines and lack of other ingredients, local cooks started to use it in their traditional dishes and soon mastered its preparation.

Method

Peel the kohlrabi and cut it in pieces or slices. Peel and cut the potatoes into cubes, do the same with carrots. Add water to cover all the ingredients in the pot. Cook for 1,5 hours.

Cook the smoked pork meat in a different pot. When the water boils, pour it out as it is very salty. Refresh with lukewarm water and cook until the meat is tender.

As kohlrabi cooks it also thickens. For a better taste add some soup from the smoked pork meat pot. After 1,5 hours add cooked beans, sliced garlic and a spoon of tomato paste to soften the sweetness of kohlrabi.

Once the dish is cooked serve with the cooked meat.
