When you first walk into a Cypriot bakery you will be overwhelmed with the amazing smell of freshly baked bread neatly lined up, rack after rack of huge village loaves.
Method
If not using yeast, knead the dough with water and flour until soft. Allow to stand for 4-5 hours.
Knead the dough or yeast with salt, cinnamon, mastic, and water until thick. Let it rest.
Cut it into pieces and roll them either in shape of a ball or baguette.
Dip it in wet sesame mixed with aniseed. Let it rest.
Shape and bake in hot oven.
