Šparoga je jedna od najcjenjenijih samoniklih kultura koje uspijevaju na području Istre, a bere se od sredine ožujka do konca travnja. Raste na teže dostupnim mjestima, često u zaklonu bodljikavog grmlja, pa su preduvjeti za njeno branje oko sokolovo, čelična volja i spremnost na pokoju ogrebotinu.
During March, April and May, the Days of Istrian Asparagus will give true "asparagus lovers" an opportunity to relish in imaginative, delicious and fragrant delicacies made from Istrian wild asparagus, ranging from the renowned "fritaja" (omelettes), soups, homemade pastas and risottos to ingenious combinations with meat, fish and scrumptious desserts.
Asparagus is one of the most appreciated wild plant varieties growing in Istria, picked from mid March to late April. Asparagus grow in hard-to-reach areas, which are often protected by thorny bushes. Its picking requires eyes like a hawk, an iron will and not being afraid of an occasional scratch.
With its superb, slightly bitter taste, wild asparagus inspire the best culinary chefs, having become much more than a simple folk cuisine ingredient. Today, it is the basis of many fine delicacies for the most demanding gourmets and every Istrian restaurant has come up with its own variations based on its precious aromatic shoots.
