The Lorraine has a variety of flavours on offer, such as bergamot oranges, madeleine cakes, sugared almonds, deseeded jam with duck, and of course, famous mirabelle brandy. Discover one of its specialities, quiche, accompanied by wines from Moselle or the Côtes-de-Toul AOC.
Roll out the pastry and prick with a fork.
Dice the bacon and lay out on the pastry.
Preheat the oven to 210°C. Heat the milk in a saucepan.
Beat the eggs in a bowl with the milk and cream.
Season with salt and pepper and pour the egg mixture over the bacon.
Bake in the oven for 35 minutes.
Remove from the oven and serve immediately.
